Fallow
fal·low, adjective. (of farmland) plowed and harrowed but left unsown for a period in order to restore its fertility as part of a crop rotation or to avoid surplus production.
Fallow is a blend of farm house ales from within the brewery each of which focuses on a different grain and fermentation character. Like a field properly farmed and left alone for a season, the result is an enhanced yield; in this case of flavor. The character of the two beers mature and increase complexity. This first batch has a bright acidity at the front which gives way to a clean and dry finish with accents of buckwheat.
