The Barrel Fermented Gose (Peach)

The name says a lot about the profile of this beer, what it doesn’t convey is the sense of place, and multi-faceted work that goes into working “local”. The oak used in construction of this barrel and the peaches placed inside of it that the beer was conditioned on are sourced from the same property in Bridgewater, CT. Unlike the peaches, which once picked, the peaches are brought directly to the brewery. The oak, once harvested must be sent to a mill, cured, and then a cooper must make the barrel. Years after its first use in making Chardonnay, this barrel traveled to our brewery for it’s inaugural beer. Just as the individual components used in producing this beer may come from the same place but have different profiles and processes to become themselves, they come back together to form a singularly succulent acidity softened by peach and vanilla aromatics, and a quenching salinity.
