On Wednesday November 21 we will be having special pre-Thanksgiving holiday hours in our tasting room during which time we will release the first bottles of Canes, our collaboration with our friends from Fox Farm Brewery in Salem, CT.
Back in July we had the pleasure of hosting Zack, Dave and Stephen on our farm to brew this Connecticut Wild ale that is grown, malted and foraged in our home state of of Connecticut. Drawing inspiration from farm and rural breweries in northern and eastern Europe, where branches are frequently used as a loitering (filtration) medium for mashes we sought to use a similarly structured and abundant native plant. Raspberries felt appropriate, and the common use of red raspberry leaves in tea meant there was flavor to be extracted from the entire plant.
Rather than filtering through the plants themselves, using our mash tun and it’s stainless falls bottom, whole raspberry plants (canes) from our respective homes were steeped, stems and leaves whole, in hot wort produced with Connecticut grown and malted barley along with raw wheat and emmer from Thrall Family Malt in Windsor, CT.
Fermented with a blend of our house cultures and conditioned with honey from our neighbors Beavertides Farm in Sharon, CT the bottles offer additional expressions of funk, suggestions of raspberry, and subtle tannins.
