Back in April we began our path of producing a series of barrel aged farmhouse ales focused on rusticity, approachability and reproducibility. Each beer is brewed with a significant portion of an ancient/uncommon cereal grain in the mash and fermented in stainless steel with the same blend of native yeast and bacteria before being transferred into a red and white wine barrels for further maturation. A selection of barrels is chosen for each blend, and reconditioned with honey in the bottle until it is ready for release.

Medio is the first of these beers to be ready. This beer is brewed with a significant portion of Connecticut grown Emmer. Also known as Farro Medio, Emmer was one of the first ancient cereal grains to be cultivated. It is currently experiencing a resurgence in popularity amongst bakers due to its hearty character and deep flavor. We found it produces a wort with a beautiful spice character which through fermentation gives way to a round and rustic nature. We are thrilled that @thrallfamilymalt took the chance and grew this beautiful grain for us and are very excited about the direction this program is heading. This beer will be available in the tasting room on Saturday for on-site pours as well as 750ml bottles to go.
