Ellita is a baby saison brewed with pilsner malt from Valley Malt (Hadley, MA) and a variety of wheats from Thrall Family Malt (Windsor, CT). Deviating from our standard practices of “clean” saisons, we fermented this beer on the spent Ella hops from a single hop pale ale to give the beer nuances we could achieve no other way. Except a subdued hop character paired with a deep stone fruit and light esters from delicate fermentation.
