Lillian

Together with our friends from Naparbier, visiting us from Northern Spain, we produced a beer that to us is quintessential summer. A base beer of pilsner malt from Valley Malt in Hadley, MA, raw emmer, rye and triticale from Thrall Family Malt in Windsor, CT is produced with a small addition of salt into the kettle before fermentation in stainless steel using a blend of cultures from our respective breweries. The resulting beer, with a delicate tartness is conditioned on 100 lb of Lillian, Jaunne Flame, Yellow Wyche, and White Queen tomatoes grown by our friends at Marble Valley and Fort Hill Farm.

This beer is reminiscent of training tomato vines and trimming suckers in your garden while resin builds up on your hand and the sun beats down on your face.
