Wit bier with a twist. We brew this wit beer with Valley Malt pilsner, raw wheat, with a small addition of locally grown dried orange peel and white peppercorns (not local) in the boil. Fermentation with a Northeastern European farmhouse yeast strain that is able to ferment at high temperatures to develop a profile similar to traditional Belgian wheat beers with a little bit extra. Beautifully balanced.
