Senescence
Senescence is the collective process that leads to the death of a plant, such as a leaf. Through this beer we seek to capture the bittersweet beauty and color of the summer’s end and bridge the gap until nature’s wheel turns back to spring. Late season foraged birch leaves and Connecticut chardonnay grapes offer an appropriately tanic quality with hints of apple and pine nuts alongside complex acidity produced by fermentation with native wild yeasts.
