
Spry
A collaboration with our friends Dmitry and Eva from Baltic Bay Wild Ales in St Petersburg Russia in November 2017. Spry beer is brewed with rhubarb and foraged staghorn sumac from our farm. Exuberant strawberry and lemon character are refined by the introduction of a spelt farmhouse ale aged in wine barrels for 12 months for a maturity surpassing its age while maintaining exuberant character.

Our second batch of Spry is produced with a similar steep in the kettle of foraged sumac and rhubarb from our farm, with a twist on how we introduce the wild component of this beer. Like the first batch, most of the beer was transferred to a stainless steel fermenter for primary fermentation with our house yeast. After introduction of the sumac and rhubarb, we filled our coolship with vibrant strawberry colored wort to be inoculated with wild yeast and spon cultures from the winter air. This portion was then blended into a stainless steel fermenter with the rest of the batch during its primary fermentation with our house yeast.
